Black Bean and Mango Salad
1 can (15 oz.) black beans
2 cups mango, diced
1 cup sweet red bell pepper, diced
6 green onions, thinly sliced
1/4 cup cilantro leaves, chopped
1/4 cup fresh lime juice
1 Tbsp. olive oil
1 seeded jalapeno pepper, minced
salt to taste
Combine ingredients in bowl. Toss and serve.

Turkey Muffuletta
1 loaf Italian bread
1/3 cup olive oil
3 Tbsp. balsamic vinegar
1 tsp. dried basil
1 garlic clove, minced
1/2 tsp. salt
3/4 pound sliced deli turkey
6 ounces provolone cheese, thinly sliced
1/2 cup black olives, sliced
1 large tomato
Cut bread in half lengthwise. In a small bowl, combine the oil, vinegar, basil, garlic, and salt; brush over cut sides of bread. Layer turkey, provolone cheese, olives and tomato. Replace bread top. Wrap in plastic wrap, refrigerate for 30 minutes. Enjoy!

And one more.....from a HFPE meeting when we lived in WA state. Very yummy and really easy, too. We served this last week at my sister's baby shower, and they were gone.

Mini Cheese Cakes
Vanilla Wafers
2 (8 oz. each) cream cheese
3/4 cup sugar
2 eggs
1 Tbsp. lemon juice
Pie filling of choice
Beat cream cheese, sugar, eggs and lemon juice together until fluffy. Place a vanilla wafer in the bottom of each cupcake paper cup and fill with mixture until about 2/3 full. Bake at 350 degrees for 20 minutes. Makes approximately 12 mini cakes. Let cool and add a spoonful of pie filling.
