This recipe is a favorite of everyone that I know that has tried it...including my dad! It's super easy...and fast...and yummy. I will be taking this to our Branch Thanksgiving Feast next week!

WINTER FRUIT SALAD
Ingredients:
1 can (20 oz.) pineapple chunks
1 small package cook and serve vanilla pudding
1 quart mixed fresh fruit chunks
(apples, bananas, oranges, etc.)
3/4 cup chopped pecans or walnuts
Preparation:
Drain pineapple into a small saucepan. Set pineapple aside. In saucepan, combine pineapple juice and pudding mix. Cook over medium heat until thickened. Cool. Combine pineapple, other fruits, and nuts in a large salad bowl; add dressing and stir to coat. Chill until ready to serve.

Just a note: My hubby doesn't like nuts, so I usually don't add them. He also doesn't like crunchy fruit mixed with soft fruit, so I usually use pineapple, bananas, and mandarin oranges. It's also good with Banana Cream cook and serve pudding mix.
